Acne safe broccoli cheddar soup almost sounds too good to be true. And you might be thinking that we are going to eliminate the dairy, and then it will be safe. Almost…but there are a few other things to consider when making delicious dairy-free soup.
The reason we decided to revamp this recipe to make it acne safe is because one of our virtual clients loves it and had a little slip up on some.
One bowl of regular broccoli cheddar soup could cause serious problems for your face. It’s loaded with cheese and cream. So we decided to make it.
Tips for Making Non-Dairy Substitutes
Many non-dairy recipes call for nutritional yeast as the “cheesy” substitute. And, we love nutritional yeast for this purpose too. However, you must choose a non-fortified nutritional yeast to maintain the “safe” rating for skin prone to acne.
Many nutritional yeasts are fortified with vitamin B12. This means they add B12 to the yeast as a means of helping vegans and vegetarians to get their daily dose of B12.
And, guess what? Vitamin B12 is terrible for acne. So steer clear of fortified nutritional yeast and choose the non-fortified version instead.
We used heavy coconut cream for this recipe. It’s really thick and serves as a nice creamy thickener.
Cruciforous Vegetables are Good for Hormonal Acne
One reason we love this recipe so much is that it’s all about broccoli. And broccoli is a cruciforous vegetable. You may recall that crucifourous veggies help balance hormones and help to heal hormonal acne.
They include broccoli, cauliflower, and cabbage.
Acne-Safe Broccoli Cheddar Soup
Ingredients:
2-3 TBSP Olive Oil
1 medium onion (diced)
3 medium garlic cloves (minced)
2-3 medium new potatoes (peeled and diced)
2 medium carrots (peeled and julienned)
1/2 C raw cashews
1 C water
1 tsp paprika
1 tsp dry mustard
1/4 tsp turmeric
1 tsp Himalayan pink sea salt
1/2 tsp black pepper to taste
4 C Vegetable Broth or Chicken Broth
6 C small broccoli florets
1 can heavy coconut cream
1. In a large pot, saute olive oil, garlic and onion until tender.
2. Add potatoes, carrots, cashews, one cup of water and four cups of vegetable or chicken broth to the pot. Bring ingredients to a medium boil.
3. Once the mixture is simmering, add in the unfortified yeast, paprika, mustard, turmeric, salt and pepper. Continue to simmer for 20 minutes until the ingredients are soft.
4. Use an immersion blender or a vita mix to blend the ingredients together.
5. Once blended, add in one can heavy coconut cream and the broccoli florets and simmer for five minutes.
You can top this with some non-dairy cheddar shreds and a little bit of crispy bacon or croutons. It can be served with a fresh salad and warm bread for a delicious meal that is acne safe.
