Who doesn’t love light and fluffy pancakes?
But for someone with acne, buttermilk pancakes can wreak havoc on your skin, so we recreated pancakes with acne-sufferers in mind.
And, what are the no-no’s for someone with acne? Dairy (milk or buttermilk) and canola oil. We replaced the milk in this recipe with coconut milk or almond milk, and we replace canola oil with coconut oil.
You also could replace canola oil with olive oil for a savory pancake.
We have found that butter is not triggering for acne, even though it is derived from dairy. We also love ghee in an acne-safe diet. Feel free to top your cakes with fresh butter or choose a butter alternative if you like.
Let’s get straight to the recipe:
- 1 1/2 C all purpose flour
- 1 TBSP sugar
- 1 TBSP baking powder
- 1/2 tsp salt
- 1 1/4 C almond milk or coconut milk
- 3 TBSP coconut oil
- 1 egg
- 1 tsp vanilla extract
Mix dry ingredients. Blend liquid ingredients. Blend both together, and ladle 1/3 cup of batter onto a medium heat griddle. Let cook until bubbles form on top of cake and then flip. Cook both sides to golden brown. Serve with butter and maple syrup.
